What a crazy week we are having, between me working late and the kids having a ton of homework… I thought it’s the end of the year, did they wait to assign all the homework in the last week?? We also have summer assignments, that the kids will be tested on a few days after school starts.. which means we now have to study even harder and during summer break……. so no time to rest; in times like this I love my crockpot; because it’s so simple. I can just sit it on the counter and let dinner cook itself… sooo cool. Who doesn’t want some extra time?
This week we had Polynesian Pork Roast; boy was it yummy. We got a bottle Organicville Island Teriyaki and that was just perfect for this dinner. The Organicville Island Teriyaki gave this dinner a Island kind of taste…… pineapple juice, zesty ginger, fresh garlic, and sesame seeds sure created a unique flavor,was so yummy. I loved that all the ingredients in the Island Teriyaki are organic…if you haven’t heard or seen any Organicville products, be sure to check them out HERE.
This is what you will need to make the Polynesian Pork Roast:

3 lb pork roast

3/4 cup of Pineapple & Apricot Jam *

1/2 cup brown sugar
-
1/4 cup apple cider vinegar *
-
1/2 soy sauce *
-
1/4 cup Molasses
-
2 cups chicken broth
-
garlic ( to your desire)
-
Salt & pepper to taste

* we substituted all these ingredients and used the Organicville Island Teriyaki
This is how to make this:
Add the pork to the crockpot; mix all the ingredients, drizzle over the pork; close lid and cook for 8 hrs on low; add some cornstarch to thicken the sauce right before serving.. Serve with Rice or anything your heart desires; we had rice & salad.
Now doesn’t that look good? Even after 8 hours in the crockpot…. the top is the fat, our pork roast was frozen when it went in so we didn’t cut it off, hubby like sit, I don’t… but looks pretty good though. This was so yummy that we didn’t have any leftovers at all; the kids kept asking for seconds and even third’s and when the meat was all gone they were kind of disappointed. It was really really good; we loved the sweet flavor the Island Teriyaki sauce, you should check it out and try it.

Oh yum – this sounds even better than with just the apricot jam alone. I, too, find myself using frozen pork from time to time, but I cut the fat off about halfway through. Since my family really likes sauce, I hate having all that extra fat. I’ve bookmarked, this one, too! If we weren’t going out to eat tomorrow, I’d be tempted to take out a pork roast right now!

I would love too hear how the family liked it… and that’s a great idea with cutting ff the fat 1/2 way through, need to remember that….
