It’s hot in Florida. Who wants to spend time in the kitchen cooking dinner every night? Not me and I’m sure you don’t like it either. The kitchen can get sticky, hot and smelly this time of the year and before dinner is even on the table I’m exhausted.
We love to use the great outdoors to cook our dinners and keep the house cool for when we are ready to eat. We #FireUpTheGrill at least 4 nights out of the week and you will be surprised all the amazing dinner ideas you actually can cook on the grill, no worries there are plenty of recipes to go around that will keep you fed all summer long.
I shopped for my weekly groceries at Walmart the other day and found a lot of products from Kraft that would work very well with my dinner menu for the week. It’s watermelon season so why not incorporate watermelon in my dinner creation. Have you ever tried it?
I picked up everything I needed from fresh veggies & fruit to all the dressings and items I needed to feed the family for the week. Love the new Kraft Salad dressings, I was so surprised when I found a bunch of new flavors today. Have you stopped in the salad dressing aisles lately and checked out the new varieties? Loved the Balsamic options, many to choose from.
Well, I love grilled watermelon, add a dash of salt and enjoy, straight from the grill while you wait for your main entree to finish. But you so have to try my grilled Watermelon and Feta Summer Salad, it’s perfect as a side or even for me as a main entree. I could eat the entire bowl. It’s that good! I did tell you it’s very simple, right?
This is what you need to make the Watermelon & Feta Summer Salad:
So, did I promise too much? it was so easy, took like 6 minutes to put together and it was delicious. I love serving it with a roasted chicken or steak, whatever you have for dinner that night it goes well with anything, another favorite of mine is adding fresh French bread, ahhhh …. Soo delicious.
You really can grill just about anything and fruit is my favorite. You could mix up this salad a bit and add grilled peaches instead of the Watermelon, I bet it would be a great side dish as well. I also love to bring this salad as a side dish for any get together we have and I grill the watermelon right at the party just before I serve it, takes really no time at all and everyone is amazed about the flavor combination.
Don’t be afraid, give it a try and I know you will be pleasantly surprised from the flavors, too. If you are still looking for additional fun summer grilling recipes, be sure to check out this digital cookbook, it’s free!
Make it a meal, add some grilled burgers, homemade french fries and a strawberry smoothie, all simple and fast but oh so delicious.
