Sunday breakfast is a must in our home. That’s the only time we all sit down at the table and enjoy each other’s company; we talk, we laugh, we read the Sunday paper, we eat and drink lots of coffee. This has been a tradition in our home for many many years and I value it every week more, especially since the boys are getting older and closer to moving out; one will leave for college in the summer. My time with the kids and my husband is valuable on Sunday mornings. Wouldn’t want to miss it for the world.

Every Sunday I create a new dish, mix up and old breakfast favorite or just make a simple pancake, but it’s always a surprise for the kids and hubby alike. It’s my treat to show them how much I love them as well as giving me much need time in the kitchen.

Last Sunday wasn’t any different; I found the Pumpkin Spice creamer, yup… it’s finally out. I’ve been waiting for months for it to arrive and I finally found it and I was able to grab the very last bottle at my local Walmart. Guess I wasn’t the only one looking forward to the Coffee-Mate Pumpkin Spice Season.

Hubby and I enjoy the liquid Coffee-Mate in our morning coffee every day and since we have a Keurig and I can get the Starbucks K-Cups I’m in heaven; what more can I girl ask for; her favorite Coffee Mate Pumpkin Spice and a Starbucks K-Cup ~ Pure Heaven. For me, that’s the perfect breakfast on the go; my kids of course pull up their noses if I dish up coffee, so my breakfast of choice this week was a simple Pumpkin Spice & Raspberry Nut Monkey Bread.

I just tossed all my favorite ingredients into a baking dish and out came this amazing super simple breakfast creation that everyone loved. I just had to share it.

Pumpkin Spice Raspberry Nut Monkey Bread

This is what you need:

  • 4 cans refrigerator biscuits ~ cut into quarters
  • 1/4 cup of Coffee-Mate Pumpkin Spice, liquid
  • 1/2 cup butter
  • 1 cup brown sugar, packed
  • 1/2 cup nuts, chopped
  • 1/2 cup frozen fruit of your choice, Raspberries and Blueberries work well

This is how to make it:

  1. Pre-heat oven to 350
  2. butter your baking dish
  3. melt butter in microwave, set aside and let cool for a few minutes
  4. take your quartered biscuits dough and toss into the brown sugar, coat well
  5. place one layer dough coated with brown sugar into the baking dish
  6. one layer of fruit
  7. one layer of nuts
  8. last layer (if you have any left) dough rolled in brown sugar
  9. mix melted butter, Coffee-Mate Pumpkin Spice & leftover brown sugar
  10. pour on top of your monkey bread
  11. bake for 25-30 minutes

It’s that simple and the nice part, you can mix it up and add different Coffee-Mate, like maybe peppermint, different fruit and nuts, to create a different dish for your family. My kids gobbled it up while hubby and I sipped on our fall coffee; ahhh… the smell, the yumminess and the memories are priceless to me.

    I make regular monkey bread sometimes, but never tried it with raspberries. Both of my boys are BIG raspberry lovers, so I need to make them some of this SOON!

    My Daughter loves flavored creamers. I don’t know if she has tried the pumpkin spice yet. I don’t use them because of the special diet I am on… but wish I could.

    I lovw pumpkin flavors but we dont purchase nestle. There are some dairy free coconut milk ones ww buy at times but mostly I drink my coffee black.

    I make homemade monkey bread from scratch every winter. It’s my kids’s favorite part of winter, along with some hot cocoa! And yes, we add coffee-mate to our cocoa!

    I have been wanting to try this pumpkin spice coffee mate since I have seen it advertised. It sounds delicious. This is a very creative recipe that you came up with and I will have to try that too.

    Well now that sounds good. I like the sound of this monkey bread. I used to love the Coffee Mate creamor but can’t drink coffee anymore. My favorite was the hazelnut.

    I like this Coffeemate Coffee creamer flavor of Pumpkin Spice and I get it every year before the Holidays. I really like your recipe for Monkey Bread using this creamer. It looks delicious and I would like to have this for breakfast!

    I am a coffemate freak seriously. I really think I drink coffee sometimes just for the creamer. I really like the seasonal flavors and their year round ones too. The pumpkin spice is one of my favorites and the creamer is so versitile you can use it so many ways.

    I remember my Mom making monkey bread! I loved it and so did everyone else. I like how this has a twist of raspberries. It looks delicious.
