It’s another month and that means we are showcasing another Fresh From Florida vegetable. I hope you enjoyed my previous recipes and so far we are having a blast showcasing a new fruit or vegetable of the month and all are Fresh From Florida.
This month I was asked to create something fun with Florida Tomatoes . Tomatoes are the vegetable off the month and are in season. Fresh, ripe juicy tomatoes are always best when it’s their prime time and I love to eat them with a little salt & pepper or in many dishes. Such a wonderful vegetable that can make a simple dish shine.
It was no brainer for me to come up with a great dish to showcase, what I had a hard time with, picking just one recipe idea. That was hard, I would have loved to showcase a stew, tomato gravy or maybe even homemade spaghetti sauce but in the end since Tomatoes are in season and rip a simple recipe made the cut.
I’m excited to share with you a simple appetizer or even meal that is gluten free and only needs a few ingredients. The flavor is amazing and if you keep it all Fresh From Florida you will not be disappointed with my Gluten Free Parmesan Tomatoes. They were amazing!
I loved them hot out of the oven, but even after they cooled off, I enjoyed them as much. They almost tasted like a pizza without all the carbs. Just make sure you use big, juicy Fresh From Florida tomatoes and cut them in half, don’t bother cutting small slices, they are much better if left in half’s. Ohhhh … so good.
I’ve told you before that it’s very easy to see what fruit or vegetable is in season. The Fresh From Florida website has the amazing schedule posted along with monthly featured recipes that go along with the produce of the month.

Finding Fresh From Florida produce is simple, too. Grocery stores like Publix have them all clearly market, helping you find produce that is right from your neighborhood farmers and doesn’t have to travel the world to get to your table; it’s always fresh and always in season. Can’t get any better then that.

I would never of thought to do this with tomatoes but these look super good.
