Oh my, back to school is slowly approaching here in Central Florida. We picked up my son at the airport the other day. He returned from Chicago, where he spend all summer working and learning how real work can be so hard. I can not believe I’m already talking Back to School and making plans of what to send for Breakfast, lunch and snack every day.
I spend a few hours thinking about our back to school snack and breakfast ideas while driving to Tampa to the airport, after all, what better time than on a 45 minute Interstate drive, right? While we arrived at the airport I saw a text that the plane was delayed by almost 2 hrs., I quickly added Walmart into my navigation system so I could look around the nearest Walmart to pick up Breakfast items for the next day and to pass the time. Who really enjoys hanging out at the airport for hours? Totally not me, Walmart was a much better choice.
I wanted to surprise my son with a big breakfast so I picked up all his favorite things like fruit, juices and his favorite Post cereal, Fruity Pebbles. While I picked up the Fruity Pebbles I quickly came up with an idea to create a doughnut with the cereal. I knew it would be amazing and I knew it would be fairly easy to do and would be perfect for a quick breakfast once the kids head back to school since I could make them the night before or even send them as an afterschool snack, the possibilities would be endless, at least so I thought. I was so excited to give it a try.
Let me tell you, I made them for breakfast yesterday morning and my son was impressed! He is a Teen and hardly anything impresses him or is good enough for him these days but when he ate my Fruity Pebble Doughnuts he was speechless and said “Mom… I would be the happiest kid in the world if you dish these up every single morning, they are amazing!!!” That totally made a mom’s heart jump and I smiled for hours.
I do have to admit, these Fruity Pebble Doughnuts did turn out great. I loved them myself, too! I plan to dish them up at least once a week maybe even twice, because they are so easy and I could even freeze them if I wanted to make a bunch ahead of time. Another fun twist would be to change the cereal and maybe include the Honey Bunches of Oats Honey Roasted for a nutty flavor or the Cinnamon Toasters for a more “cinnamony” type of taste.
The possibilities are endless and since Post has an abundant of flavors there is something for the whole family. You could also add a simple sugar icing to the top but we decided they were perfect without any topping since we had the Fruity Pebbles that made the Doughnut sweet and flavorful enough.
I’m very satisfied with my new doughnut creation and thanks to the affordability of the Post cereal I didn’t have to worry about spending a lot of money on breakfast or snacks and the kids can each pick their favorite flavor and enjoy it anytime of the day, whether in my delicious doughnut recipe, as a simple afternoon snack or even as a quick dinner.
I encourage you the next time you are looking for breakfast, lunch or dinner ideas for your little ones, stop by the cereal aisle at your local Walmart and let your imagination flow, you will be surprised how many amazing things you will come up with and what your kids have to say to you. Just let it go, give it a try and don’t be shy, it will be wonderful.
