Gluten Free Cherry & Walnut Coffee Cake #Recipe

I love nuts and cherries. The other day when I stopped at my all time favorite store “World Market” I found tart cherries in a jar. They are my favorite. I was super excited, I had not found them since I left Germany and the jar was less than $3.00 each; what an awesome bargain.

Have you ever tried jarred cherries? They are amazing; all natural, packed in cherry juice and no added flavors or preservatives, you get what you see. I love to use them to bake goodies for the family or make dessert and since I had a few packs of Walnuts left in the cabinet from all the Christmas baking; I decided to give my Cherry Walnut Coffee Cake a try.

In Germany we love to use nuts for cookies and cakes instead of flour and this is one recipe that my grandma shared with me and it turned out amazing. I can’t believe how simple it was. So if you are gluten free or just have a few extra packs of Walnuts (you could use Pecans as well) around the house, this will be a treat for you.

This is what you need for the Gluten Free Cherry & Walnut Coffee Cake

  • 1 Jar pitted Sour Cherries in light Syrup, drained (use the juice and add it to sparling water for a refreshing drink… brings back some memories for me..ahhh)
  • 5 eggs, divided
  • 1 tsp. baking powder
  • 200 gram sugar
  • 300 gram ground walnuts (I used my Ninja Blender to grind them up in no time)
  • This is how to make the Cherry & Walnut Coffee Cake

    1. Pre-heat oven to 350F
    2. Mix Walnuts, sugar, baking powder and egg yolks in a bowl
    3. Whisk your egg whites till stiff and fold under the nut mixture
    4. Fill your cake pan or loaf pan, muffin pan etc and put in oven at 350F for about 30 -45       minutes, or till a toothpick comes out clean… remember the egg whites take a  while to dry

    Simple as that; in no time you created a delicious, juice and nutty coffee cake and all gluten free. trust me, once you use nuts to bake instead of flour you will never go back; It’s healthy for you and takes no time at all.

      These sound amazing! I love that they are gluten free. My sister in law always makes gluten free goodies and they are always healthy yet yummy! I will have to pass this recipe along to her.

      That cake looks fantastic. My Hubs has been eating gluten free for awhile now.. I myself have been at it for maybe 6 or so years. We also eat sugar free so if I make this, I will have to sweeten it with something besides cane sugar.

        I used Swerve in mine the other day and it was just as GOOD!!! So no worries.. you can substitute sugar …:-)

      I never realized that you could use nuts instead of flour–but thinking about it-I have seen almond flour in the stores–it would be easy with the right equipment to make your own. This recipe sounds very good-I do so love cherries!

      I had to read over this a few times before I realized the walnuts were the bulk of this recipe. I am very interested! I plan to make this up.. Have you tried it with Pecans? Would that be any good?

        Actually I ran out of all Walnuts this time and used 1/2 Pecans and it was delicious.. totally can use Pecans, even Hazelnuts as well..
