It’s time for some summer dinners; the days are getting longer and the heat is getting up there; who wants to eat a heavy hot meal and especially stand in the kitchen for hours to prepare a home cooked dinner? I know I don’t want to and if it’s hot outside I’m not even in the mood to cook, and I don’t even want to think of a heavy warm meal.

Well.. if you are anything like me, then get excited, sit down and check out the brand new recipes from Gooseberry Patch and their amazing 101 Soups, Salads & Sandwiches book. No need to run to a fast food joint to get a wonderful quick dinner; this book just like the other 101 Books Collection from Gooseberry Patch will soon become your favorite book and will be used over and over this summer for delicious family meals. I know in my home, hubby has used this book over and over to create amazing, simple yet delicious dinners for us, quickly and perfect for a HOT summer day.

The 101 Recipe collection is by far one of my favorite; every book is jam packed with amazing recipes and the best part… each recipe is listed with a picture…I LOVE it!! Each recipe is printed along with a mouthwatering picture on glossy paper; makes me feel like dinner on a dime with a  cookbook in style..!!!!

This book is divided into 4 categories from Simmering Soups, perfect for the colder days, Sensational Salads, which will come in handy during the HOT summer month when all the fresh vegetables are in season to Satisfying Sandwiches that can be dished up all year round for lunch and dinner and terrific Toppings for your salads, sandwiches and soups… you don’t want to miss the Topping section.. gives your dishes a lot of flavor and “fanciness”.

We enjoyed many dishes out of this book and wanted to share one of our favorites with you, so you can see this is an amazing, yet simple cookbook that shouldn’t be missing in your kitchen.

11-Layered Garden in a Bowl

This is what you need:

• 3 c. mayonnaise
• 2/3 c. sugar
• 2 10-oz. pkgs. mixed salad greens
• 1 lb. bacon, crisply cooked and crumbled
• 1 red onion, diced
• 10-oz. pkg. frozen peas, thawed
• 1 green pepper, diced
• 2 c. cauliflower flowerets
• 2 c. broccoli flowerets
• 1 c. sliced mushrooms
• 1 c. shredded Cheddar cheese
• 1 c. cherry tomatoes, halved
• 1 T. Italian seasoning

This is how to make this Salad:
In a bowl, mix mayonnaise and sugar until blended; set aside. Layer half the salad greens in a large serving bowl or 13″x9″ glass baking pan. Layer with half the mayonnaise mixture, half the remaining ingredients except tomatoes and seasoning. Repeat layers. Top with tomatoes and sprinkle with seasoning. Cover and refrigerate 2 hours before serving. Makes 8 servings.
