Rush-Hour Recipes Cookbook is jam-packed with 230 yummy, quick & easy dinner recipes everyone will enjoy.

You’ll find speedy 5-Ingredient Favorites like Bacon & Cheddar Chicken and Melinda’s Mexican Manicotti, plus Virgil’s Veggie Fettuccine, Deep-Dish Skillet Pizza and other tasty One-Dish Dinners. On chilly days, warm ’em up with recipes from Soup’s On! like Tom’s Chili Con Carne and Hearty Healthy Minestrone. Slow-cooker recipes like Beef Tips & Noodles and Easy Cheesy Enchiladas can’t be beat for cook-all-day convenience. They’ve even included easy crowd-pleasers like Italian Hamburger Mac, Luau Baked Beans and Old-Fashioned Butterscotch Bars…they make extra-large servings so they’re perfect to share with friends or tote to a last-minute potluck or bake sale.

Many dishes can be prepared in 30 minutes or less, using familiar pantry ingredients.

We love Gooseberry Patch and this book was just as expected,  AMAZING!. The day it arrived I got a call from Hubby announcing a new “Gooseberry patch” book had arrived and he already picked something for dinner. Boy was that fast; apparently this book has amazing recipes that use ordinary stuff from your pantry, I was told. I left it up to hubby to have dinner ready after I get home from work and let him surprise me with a “Budget” dinner from the new Rush Hour recipe book. I had no idea what to expect that evening when I walked into the door.. check out what I saw on the stove…

Doesn’t this look delicious? It sure smelled yummy and I couldn’t believe how easy it was with ingredients that we already had in the house.

Stir-Fried Pork & Noodles
(we used Chicken instead)

This is what you need:125_6038

  • 5c. water, divided
  • 2 3oz pkgs Oriental –Flavor ramen noodles, divided (if you have a Teen in the house, you should have these..lol)
  • 2 t. oil, divided
  • 16-oz pkg frozen stir-fry vegetables, thawed
  • 1/2 c. onion, sliced
  • 3 gloves garlic, minced
  • 3/4lb pork chops (or chicken like we did, could even use beef), cut into strips or cubes
  • 1 T. cornstarch
  • Optional: Soy Sauce

This is how to make it:

  1. In a Saucepan over high heat, bring 4 cups water to a boil.
  2. Add noodles; set aside seasoning packets. Boil noodles for 3 minutes, drain.
  3. Meanwhile, add one teaspoon oil to a large skillet over medium-high heat. Add vegetables, onion and garlic to skillet. Cook and stir until crisp-tender, about 4 minutes. Set vegetable mixture aside in a bowl.
  4. Add pork ( or whatever meat you like) and remaining oil to skillet. Cook and stir just until pork (or meat) is cooked through.
  5. Remove pork (or meat) add to bowl with vegetables.
  6. Combine remaining water, reserved seasoning packets and cornstarch in skillet; stir until simmering and well-blended. Cook for one minute, or until slightly thickened.
  7. Add noodles; toss to coat, add meat and vegetable mix.
  8. Cook and stir gently over low heat until warmed through.
  9. Serve with Soy sauce, if desired. Makes 4 servings.

This was such a quick and “hearty” dinner. Simple, few ingredients and everyone in our Crazy household enjoyed it. The Teen loved it because it had his beloved Ramen Noodles and the Tween got a kick out of it that we used ramen Noodles in a dinner dish.

The Rush Hour recipe book is jam packed of amazing quick dinner ideas, that have been tested by real mom’s and grandma’s like you and me and will definetly turn out great anytime you need a quick dinner idea. This book also has a great section for Slow cooker recipes, which are my favorite for a busy soccer night. I can’t wait to dig in and try them all and will of course, keep you posted on which ones are a hit in our home.

    First I love cookbooks and we are always on the run living in a parsonage. We never know what is going to happen from day to day so quick and good meals are really important. Plus I love Gooseberry Patch Cookbooks! They are always good!!

    Why i would like to win this is i am working full time & so is my husband, just like alot of other families , and could use all the help i can get for the finicky or picky eaters i have in the house along w/ not having alot of time by the time i get home!     The days I work in the office versus from home leave little prep time for dinner. I’d rather not rely on out of the box meals or takeout, so more quick recipe ideas are always welcome!
