Monday Meal Plan for May 23

This week will be a super short week for us; we are visiting my best friend Ursula from Germany over the Memorial Day Weekend. No, not in Germany, but she is now living in Alabama and I haven’t seen her in over 4 years now. She was a Bridesmaid at my wedding last time I’ve seen her, unfortunately we had very little time together….so actually I haven’t seen her in almost 10 years   I’m super excited to catch up with her and her family and kids.

We will spend the entire memorial day weekend in South Alabama. If you have any tips on what to do or where to go near Mobile, leave me a message,would love to hear it. I had no time in planning a trip other than booking the hotel.

I know we are brave,….lol.. I still think this will be a fun trip. Are you going anywhere for Memorial Day Weekend??

Okay let’s get to the Meal Plan before I forget about it with all the excitement. This is what we will be eating this week.

Monday: Chicken Tacos, Rice & Beans

Tuesday:  Pizza Zucchinis & French Bread (will try to post this)

Wednesday:  Chef Salad

Thursday: Polynesian Pork Roast with Rice & salad ( Crockpot Meal)

Friday: Leaving for Alabama

Saturday: Spending time at the Beach

Sunday: Enjoying the Hot Alabama sun
