Boy last week sure has been busy. I don’t expect anything different for this week. School sports, parent meetings and Dr. appointments are just a few things that are on my list between working at the office and cooking dinner; what do you have planned this week?
So this week I will keep it very, very.. very simple. I bought a bunch of lunch meats and crescent rolls, Pillsbury rolls and stuff like that at Sam’s this weekend and I will pair it with fresh veggies and make simple dinners that way. Thanks to a few friends and Pinterest ideas I have the entire week covered and hope there is something for everyone to be excited about.
Monday: Sloppy Joes & Salad
Tuesday: Stuffed Pizza Rolls with Salad
Wednesday: Meatball-Stroganoff-Biscuit-Casserole and Salad
Thursday: Taco Melts with Guacamole and Salsa
Friday: Simple Veggie Pizza
Saturday: Breakfast for Dinner ~ eggs, pancakes and anything else we want
Sunday: Mom’s night off ~ Dinner at Mimi’s house ~

There you have it.. I tried to keep it as simple, healthy and delicious as possible. That should feed everyone and keep everyone happy…. Till next week… Happy Cookin’.

Awesome that you are organized with your meals. I go day by day or we cook big at the beginning of the week and just eat off it for the rest of the week. The stuffed pizza rolls look delicious.
