Here we are again, making our Monday Meal Plan, didn’t I just make one? Time sure is flying by and we are already at the end of January. WOW! Are you keeping up with your New Year’s resolution or did you already ditch them? As you can see, I’m still hanging on with our Monday Meal Plan and as much as I hate making it, it sure is a HUGE time saver during the week. YES… I’m just like every mom that hates that 5 o’clock call “What’s for dinner” and I hate cooking every night, but with 3 kids and a husband dinner has to be done, it’s a chore that when it’s done I’m excited, but to actually do it is another story. Oh… I love to cook and bake… just not after a long day at the office, wish there was a machine that would do ALL that for me while I’m at the office and all I would have to do is sit at the table… Oh wait… it’s called a husband … he does my cooking most evenings during the work week, he is amazing!! But, planning is my job or we will eat Chicken Noodle Soup 5 days a week, or maybe one pizza night and 4 days of Chicken Noodle Soup… Lol.
My goal this year is to keep dinner simple, affordable and something everyone will eat. Last week everyone loved the meal plan, so hopefully I can find another good week of ideas that will maybe even get me some leftovers for the office or to stock the freezer for those nights when really no one wants to cook dinner, ya know … those kind of days .

Monday: Mini Hamburger Sliders, veggies & homemade fries
Tuesday: Garlic Bread bowls filled with Spaghetti and Salad
Wednesday: Meatloaf Cupcakes with veggies
Thursday: Crockpot Shredded Beef Enchiladas & Guacamole
Friday: Cheeseburger Wraps & salad
Saturday: Tacos in a Bag
Sunday: Mom’s night off! Dinner at Mimi’s house
There you have it,our dinner for the week. Took me a little to come up with, but now that it’s done I’m excited for the week ahead. You will see a lot of beef dishes on our plan, my Teen is highly allergic to chicken, pork and turkey, so we either cook the meal twice with beef and meat of our choice or we just adjust it with beef. We are finally adjusted to his allergies and are handling it well. Of course we have chicken or pork on some nights and my Teen will make himself a sandwich or pull something out of the freezer. Oh the joy of food allergies, do your kids have any?

My sister has twin boy and girl 14 and a boy 16. She struggles with meal planning and putting something on the table as well, but I think she would love your meal plan for this week! You have some really good FUN meals on here. It must be really hard to add such a difficult food allergy into meal planning. Great job!

My daughter is allergic to beef, chicken, eggs, oats, strawberry and chocolate. For years, we avoided all those foods. Now she in in her 20’s and her food allergies at better. I know how hard it can be to have a child with food allergies.

Hi Elaine.. thanks for letting me know.. maybe there is hope for him down the road, too.. ohh yeah we have egg allergy and abut 20 others, too incl fish and melons … Oh mustard, too.. have you ever heard of anyone with a mustard allergy.. it’s crazy.. but like you we learn to work around it..thanks for sharing and kind of glad I’mn ot the only one
