What….??? Monday again?? That’s how I feel lately. We always look forward to Friday and before we know it, Monday is here. Wish we could bottle Saturday and Sunday and keep them around a little bit longer, don’t you think?
Well we are having a super busy week ahead of us I will be working late at the office and hubby’s work also announced overtime for the next 3 months. He was my rock that had dinner ready every night when I got home, now that won’t happen at all.
Both of us won’t get home past 6pm and we both will be super tired so this week will have to be super simple till we make it to next weekend so we maybe can make a few cook ahead meals, or maybe I get lucky this week and find some energy to make a few extra meals or double the meals so we have meals for next week. It’s an adjustment for us for sure, but I know we can handle it. How do you deal with super busy weeks?

Monday: German Scrambled Pancakes with fruit
Tuesday: Gluten Free Pesto Pizza and salad
Wednesday: 3 Ingredient Crock Pot Chili #GlutenFree
Thursday: Crockpot Lasagna Soup and Salad & Garlic Bread
Friday: Cheeseburger Quesadilla & Salad
Saturday: Mini Tortilla crust Pizza ~ Movie night
Sunday: Mom’s night off Dinner at Mimi’s House!!!!

There you have it… Our weekly meal plan. I’m kind of proud of myself, I managed to get 6 simple dinner ideas, all sound fairly healthy (if you don’t think they are, add a salad, then they will be …*smile*) and best part… My Teen with all the big food allergies can eat all of the meals, too. Big plus!!
I think this mom deserves a super hero batch, all that in a simple weekly meal plan, who would have thought that can be done. I would love to hear what you are dishing up and if you have a Beef dish, would love to see it so I can Pin it to my Son’s Pinterest Board for recipe ideas.

I need to start coming up with weekly meal plans especially since we have cut out nearly all sugar and carbs, we normally do a pot of chili every 2 weeks, a big grilled chicken salad every week, breakfast (eggs & sausage), pork chops with roasted vegetables or frozen vegetables, pizzas on grain flat tortillas, smoked sausage vegetable stir fry, and breakfast quiches.
