Rotel Chicken Tacos

September 9, 2010 By Melanie Roberts 15 Comments

I’m not sure where I found this recipe ( so I can’t give credit, I’m sorry, if this is your recipe, please let me know and I will adjust it and add your credit to it), but we make it a lot. it is so simple, few ingredients, which makes this a great cheap family meal.

Rotel Chicken Tacos

You will need:

Chicken (we use 1 pack for 3 of us to eat, the boys won’t eat it, you can add as  much as your Family will eat …)

1 Can Rotel Tomatos

1 Pack taco Seasoning

1 cup of water/ or chicken stock

Optional to add 1 can of Black Beans ( I forgot mine this morning so i cooked  them later)

Place everything in your crockpot, turn it on High ( 4-6 hrs.) or Low (8 hrs.) and walk away for the rest of the day

Once you get back home dinner is ready, use a fork to shred chicken.

Add Black beans, Avocado, cheese, Sour Cream, Salsa anything you like on your taco. Soo yummy and so easy and cheap, this whole meal cost me about $5.00 for my family, so since 3 of us ate this about $1.66 per person and at least 2 lunch leftovers for tomorrow …. ENJOY

These are excellent and so incredibly easy. I think you have the hours mixed up between cooking on high or low, though!
