As I sit here, thinking about how blessed I’m to have a wonderful Family, great Friends and loving readers that enjoy my recipes and value my opinions, I also started to think that healthy meal options are very important, especially this time of the year. Who want’s to skip that cookie or piece of cake every time, right? Well, no worries I teamed up with Gorton’s Fisherman to share a quick and easy meal idea that you can make in under 30 minutes with very little prep time. Did you eat all your Turkey and Ham plates the last few days? I know I’m guilty, I had an early Thanksgiving meal with my kids, that’s a tradition we do every year a few days prior to the actual Thanksgiving day where I dish up a huge meal with lots of side dishes just so the kids can be with the rest of their family on Thanksgiving Day, especially since the boys have been grown and started dating and families of their own it makes things a lot easier if we celebrate early. Benefit for me, I get to see the kids without the “Oh we have to run” excuses.
But after all the Turkey and Ham is gone I have to admit I’m kind of tired of the leftovers and ready for a fresh, clean new dinner and this is when I started to look to Gorton’s Fisherman products at my local grocery store. The Selection was huge from Signature Grilled Tilapia and Haddock to Herb grilled Cod or even Salmon and Shrimp, the possibilities were endless and every single creation is Weight Watcher Friendly some even only 1 Smart Point and up. Love that!
I decided on the Smart Crunchy Fish Fillets because, well… Who doesn’t like crunchy fish? I thought it would be perfect in my Fish Tacos, even though any of the Gorton’s Fisherman creations would have been a great fit for these tacos, so pick your favorite fish and follow my recipe below for a quick under 30 minute meal and 10 Smart Weight Watcher Points if you eat two of the Tacos. Trust me, I was full after two! My husband who is counting his Weight Watchers Smart Points was very happy with how tasty it was, how full and satisfying it was and how low of points he used for this delicious meal.
You can mix it up, add different veggies, add Hot Sauce to the Avocado Lime dressing and of course add the Gorton’s Fisherman Fish creation that you like to make it your own. It is super easy and very filling. I love the Smart Crunchy Fish Fillets, they cooked perfectly and if I didn’t know better I would have said they are pan fried, they were that good and crunchy! Less fat and still all the goodness, total score!!
Wasn’t this a great idea? It’s so refreshing and light after a day filled with hearty meals and side dishes, it sure was a welcome change and one that we will dish up more often in the next few weeks.
