Simple Pumpkin Muffins with only 2 Ingredients #Recipe

My kids have been bugging me all week to make something sweet; they love when I’m home all day on the weekends and spoil them with goodies and homemade dinners. I wasn’t really planning on making muffins, but since the bugging wouldn’t stop, I checked my pantry and I found a cake mix and a pumpkin puree. I figured something would come out if I mix those two. I googled and found a few items on pinterest, some looked great some looked like a shriveled up apple after it was on the counter for 4 days. So I decided to take a risk and make it; can’t win if you don’t gable, right? Well.. you can guess, since it made it to the blog, it was a HUGE success.

This is what you need for the Pumpkin Muffins/Cupcakes

Simple… One box of your favorite cake mix, I had the Halloween one in the cabinet and a 15 oz can or package of Pumpkin Puree; that’s it!!

  • Add your ingredients to the mixer
  • mix well

That’s all there is to it….. Once they are mixed, fill a muffin or cupcake pan; wet your fingers and smooth out the tops of your muffins/cupcakes. The batter will be thick and sticky, but with wet fingers it will be simple to smooth them out. Pre-Heat oven at 350F and place in oven for 20-25 minutes; till toothpick comes out clear.

That’s it.. SO simple; yet they were AMAZING!! I had no problem with them cooking, looking like a shriveled apple or tasting blaaa.. they were moist, looked like muffins/cupcakes with all the other stuff included; yet they have less ingredients, no oil, no eggs and nothing JUST Pumpkin and the mix!!

They almost tasted like “cookie dough” once they came out of the oven, super moist, silky tasting; not really rich either; until you add the cream toping, so you can either add whip cream or leave it off; up to you. This will be a dessert that everyone will love at your next dinner party.

    Oh I have to try this. We plan on making muffins for Halloween for my own family. The kids would enjoy eating this although I’m going to have to look for that organic pumpkin. I’ve actually never seen it before. I’m thinking whole foods.

      I found mine at World Market, they have it on their website, too. I’ve seen it somewhere else the other day, but can’t remember for the life of me. It was YUMMYYY….

    These look great, but I dont think pumpkin puree is easily obtainable in the UK
    Can I make my own puree? Does it need sweetening? xxx

      Viccy, YES.. you can make your own and no it doesn’t need any sweetening; just peel, cut and boil your pumpkin till it’s soft; just like you would with potatoes for masked potatoes; just for a pumpkin; once it’s soft, let it cool and then puree or puree and then let cool… that’s it… 🙂 I know in Germany we don’t have Pureed Pumpkin and I always had to make my own, too. If you like for the fall you can add some gloves to the Pumpkin Puree and Cinnamon

    I laughed at the thought of mixing box cake mix with organic pumpkin, but I imagine it kicks the box up a bit on the healthy ladder that way. I absolutely LOVE making cupcakes, and those liners are awesome! 🙂

      LOL.. you guys crack me up.. It never even occurred to me that I used the organic Pumpkin; it was on sale and cheaper so I grabbed a few boxes…lol.. Guess I get half brownie points for a semi-healthy dessert 🙂

    I’ve got a cake mix that really should be used soon and one more pack of pumpkin from last year in the freezer. Perfect way to use up both before this year’s pumpkins need to be processed for the freezer. Thanks for the idea!
