It’s super hot in Florida and who wants to stand in the kitchen and spend hours on the stove? Not this gal, but I do want the family to enjoy a healthy, fresh and delicious dinner.
Earlier in the year I made it my New Year’s resolution to cook as fresh and healthy as I possibly can and so far I think we are still doing well. I buy lots of fresh fruits and veggies that we keep on hand all week long and use in varies of our meals, I make a lot of my own stables like bread and fresh pasta, thanks to this amazing little pasta maker (affiliate link) that I soo desperately wanted for Christmas last year and to my surprise I use the machine 3-4 times a week!! Love it, takes minutes to make and you can make so many different combinations.
So overall, I think we are doing really well. I buy hardly any pre-packaged meals unless I really had a super busy day at the office or we decided to just not worry that day so all in all we do cheat here and there just like the other day when I so needed this Chocolate Chip Cookie Milkshake, but in my defense the kids didn’t get to enjoy it, was all me, so that doesn’t count as a bad dinner, right?
So while I whipped up the Watermelon Salsa the other day I looked around and found a few other veggies and fruits that really needed to be eaten and for my kids to eat veggies just because wasn’t happening. I decided to dice it all just like I did with the salsa, which was a hit btw. I also had a baguette that I needed to use up and a package of the prosciutto was in the fridge, too. I love when Aldi has all these amazing ingredients for a very low price and I can spoil my family with a lot of different flavors and never break the bank, so prosciutto on the baguette it was.
This was such a simple, delicious and light dinner. We didn’t have any leftovers and my husband paired it with a few grilled pork chops since the guys always have to have a big piece of meat, I could care less about meat when it’s hot and could have been perfectly fine without. So what I’m trying to tell you, the baguettes are so easy prepared, can be paired with just about anything or eaten just the way they are making it a great and simple dinner idea, even during a busy work week.
If you need a little help in the kitchen and wonder how I manage to dice all these items so small, I have a super cool kitchen dicer (affiliate link) I believe it’s called and it’s amazing, it will dice just about everything, I used it on the Watermelon Salsa the other day, too and within minutes I have everything diced and ready for my Salsa, Salad or whatever you may need it for. So worth it and very affordable, Amazon sells them for like $10, all is dishwasher safe and I have mine for like 3 or maybe 4 years now and still works like a charm.
There you have another simple dinner idea that uses pretty much all the fruits and veggies that are currently in season and will dish up a delicious, healthy and colorful dinner or appetizer for your family and friends to enjoy.
