Sunday Brunch- Apple Nut Muffins ala German

Oh Boy, this week sure seems to fly by in the blink of an eye and when I think I’m anywhere close in catching up… it starts all over again. Here it is Sunday again and I’m kind of on track with my posts, hope you’ll enjoy this Sunday Brunch, I found this a while back on a German Recipe page and we love to make it. Simple, quick and cheap.

3-4 Apples, peeled and cut in small pieces

1 cup of Butter

1 1/3  cups of sugar

4 Eggs

2 cups of flour

a pinch of cinnamon

1/2 cup ( I like a cup) of Nuts, Walnuts, Hazelnuts ..etc

3 teaspoons baking powder

If the mixture gets too dry add a splash of apple juice… makes it even better

Mix butter, eggs and sugar creamy; Add baking powder to the flour and mix into the butter mixture, mix well, add cinnamon, the apples and nuts, mix lightly . Add to muffin tins; will make 24 muffins.

Preheat oven on 350; add muffins and bake for 15-20 min till you can insert a wooden toothpick and it comes out clear.

If you want to make it really fancy drizzle some chocolate on top and add nuts….
