I’ve been here in the US for over 15 years and I still love to make my homemade soups. They are soo different than the soups that you are used to making in the US. In Germany we make soups out of almost any vegetable with just a clear broth, no cream or anything to thicken needed.. they are super delicious and so healthy for you. They are also super quick… I love to serve a soup on Sunday for my family, that’s how it was at home where I grew up, in Germany. Sunday is the day where the entire family sits down for Lunch, all the stores are closed and it’s just a quiet family day.
Publix had carrots on sale the other day and since I bought a bunch I knew I had to make this soup… I hope you will like it as much as we did….

This is what you will need
- 1 medium onion, chopped
- 2 lb. bag carrots Fresh is best, but frozen will be ok
- Vegetable broth ( enough to cover the vegetables)
- 5 cups raw potatoes, (cut into spoon-sized chunks)
Instructions:
- In large pot add onion and carrots, glaze with some butter first…
- Add potatoes and sufficient broth to cover.
- Bring to boil. Reduce heat to simmer. Cover and cook for about 30 – 60 minutes, until carrots are tender. Cooking longer will improve the flavor.
- You can add some fresh parsley if desired J
