Sunday Brunch – German Almond Cookies

January 16, 2011 By Melanie Roberts Leave a Comment

I know Christmas and cookie time is over, but my kids just bugged me to make them some German Almond Cookies ( Mandel Platzchen is the German name), these are great for brunch or anytime your kids want a treat. Simple to make and soooo delicious…mhhhhh

You Need:

All measurements are in oz., since I had to translate them from grams in my German cookbook and oz is the easiest way, I guess you can use cups if you want to use the conversion chart HERE you can do that, too

  • 4 oz butter stick
  • 4 oz powder sugar ( confection sugar )
  • 2 eggs
  • 2 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 Tablespoon heavy cream
  • 3.5 oz almonds  ground ( put them in your coffee grinder to get them almost like flour)
  • 8 oz flour
  • frosting for decorations if you like, not a must 🙂

How to make them:

Preheat oven to 350F.

  1. Let butter sit at room temperature for a few min so butter gets soft; then mix butter and Powder sugar, till it gets creamy; add the  eggs, flour and ground almonds to the “cream” mixture. Mix well
  2. Fill a Pastry Bag or if you don’t have a pastry bag take a ziploc baggy and cut one corner tip off after you filled it.
  3. Add parchment paper to your cookie sheets and press all the cookies onto the sheet,in a half moon shape.
  4. Bake for 12-15 minutes or till the edges are golden brown ( on your first patch keep an eye on them, since each oven cooks different and they may get done sooner or take a few  min longer, let cool then dunk into your frosting and enjoy …. mhhhh they smell sooo good, too 🙂
