Sunday Crockpot Chicken dinner

This Christmas week sure is hectic, besides a busy day at work yesterday, I also had a car scare, my car shut off in the middle of a busy Highway. So neat less to say I was super happy that I had dinner in the crock pot, because I knew between the office, the car shop, soccer practice and some other things I had to do, I would probly have to run to a fast Food place to get it all done… But when I got home at 7pm my chicken was all nice and warm and just waiting for me to plate…..

This was super easy and you can adjust it to your family taste.

You Need:

  • 1 whole chicken
  • stuffing ( I used a box)
  • bell pepper
  • Onion
  • garlic
  • Spices to season

How to make it :

  • Cut bell peppers, onions and garlic,  and put in a hot pan with some oil; let it cook till it’s all soft… ohh the smell… mhhhhh
  • Stuff your chicken with the pepper mixture
  • Rub all the seasoning you like on your chicken
  • Place chicken in crockpot
  • close lid and walk away, put on low and cook at least 6 hrs. ( my chicken was in the crockpot on low for 12 (!!) hrs., it was a bit dry but still wonderful…!!

You can make stuffing like we did and add some veggies, or come up with anything you like. This was a wonderful, super easy yet delicious dinner. I can’t wait to make it again and at $.59/lb this is very affordable to feed your family a home cooked meal.
