Lunchbox Tuesday – Butterfly Pancakes

I came across this recipe a few weeks ago on a German recipe page and just had to make it and share with you guys…my kids loved it. The little one got  a kick out of the presentation and gobbled it all up.. I was surprised, I didn’t think anyone would like it.. Guess presentation is everything 🙂


For the Pancake you need:

1 Jar baby Food – Spinach or  1/4 of a pound fresh spinach

1  cup of  flour

1/2  of a cup of  milk

2 eggs

4 Slices of ham

How to make the “Green” Pancakes

Mix the flour, milk and eggs and the spinach in a bowl, batter needs to be thin and liquid, so if it is too thick add some more milk if it is too runny add some flour, I always cook the way I feel and hardly ever measure ..

Pre- heat a frying pan with oil, once hot take a spoonful of the batter and put int he pan, swirl pan around so your pancake gets thin and the bottom of your pan is covered in batter.

Brown the Pancake for a few minutes on each side, this will go quickly so don’t walk too far.

For the garnish you need:

Lettuce

Tomatoes

Green Onions or chives

How to plate:

Take the pancake and the Slice of ham and roll it up, this is your butterfly body, put on your plate, add the lettuce and the tomato around it, you can drizzle you fav. salad dressing over the salad… add the green onions or chives for the antennas and your Butterfly Pancake is done and soo delicious…

This is also a nice way to hide some of those healthy fruits and veggies, buy baby food jars and mix them in to your food, like carrots in the spaghetti sauce, or even in the pancakes etc… your kids won’t know but you know they get their vitamins and fruit & Veggies that they need…!!!!

      Missy… my daughter hated washing her hair and she had a fit for along time, yesterday I told her to put her hair under the flo and OMG she did and got it all wet.. I was amazed… it’s sucha cool and yet simple product… We love it…I think you will, too 🙂
