Last month I shared our Zucchini and Squash Casserole dish and I have to say, since I took on the challenge to buy only fruits and vegetables Fresh From Florida, I find more and more dinner ideas that I want to try. I love using fresh ingredients and I’m not a big fan of prepackaged or premade dinners, but that doesn’t mean I have to slave for hours to dish up a delicious dinner for my family.
As I mentioned the Fresh From Florida website gives recipe ideas and features a produce every month, a produce that will be in season and be its best. This month Bell peppers made the list. I love Bell peppers, have you ever tried them raw? Sooo yummy and unlike most people think, they are NOT hot at all. As a matter of fact, the red, orange and yellow bell peppers have a sweet taste and are very mild. They make the perfect snack or appetizer when you dish them up with a dip. The green bell pepper isn’t hot either, it just doesn’t have a sweet taste and isn’t my favorite to snack on, but makes wonderful stuffed peppers. A lot of salad recipes use green bell peppers and I really like them in those. If you haven’t snacked on them, you so have to!
Dishing up a healthy and delicious dinner can be that easy! I told you, it doesn’t take hours to feed your family healthy and fresh ingredients. My crew loved it, I did have to make a few adjustments and feel free to add them to your stuffed Turkey & Couscous Stuffed Peppers. We had to leave onions out since my son is highly allergic to the smell as well as the onion itself, so if you love onions, brown them and add them to your meat mixture. We also made a second batch for my Teen who is also allergic to Turkey and I added Beef for him, he loved it, just be sure to drain the beef after it is cooked to remove the fat, you could also use ground pork or chicken or a mix of pork and beef, the possibilities are endless.
You could also use white or brown rice, maybe oats instead of the couscous, I have to admit, this was my first time cooking with couscous and I’m asking myself why I waited to so long to try it. It took no time at all to make and it came out perfect, the kids loved it and so did hubby. I know this will be on our menu from now on.
We are becoming more and more aware of the need to eat healthy and choose foods that offer nutritional value in our daily meals. It is great that a healthier lifestyle is not at all hard to achieve. What’s even better is that here in Florida, we have so many great food options from local markets which makes it easy to eat seasonally. Eating fresh, seasonal items provides benefits such as products being fresher and tastier, the nutritional value is optimized, it encourages a diverse diet, is often more economical and harmonizes with nature’s production cycle.
This month on the Fresh From Florida’s website they featured a few wonderful recipes that you don’t want to miss. They would make for great dinner ideas that the entire family would love.
Finding the Florida Bell Peppers was easy, local stores like Publix have them all marked with the Fresh From Florida logo and I look online before I go to Fresh From Florida on Facebook or Fresh From Florida on Twitter to see what the featured produce of the month is so I can make sure I grab the produce in season for our dinners. It’s simple as that!

I’ve only made stuffed bell peppers once, and that was with millet- couscous sounds delicious! I’m not a big pepper fan but I remember I loved the beautiful colors, and the serving of the dish in the pepper. There’s also that wonderful aroma of fresh bell peppers you can’t ignore!
