The other day I made a traditional German dinner and didn’t even think twice that this is totally new and somewhat different for my family and friends. For me, it was totally normal until I got crazy looks when I mentioned “Vegetable & Pancake soup“ for dinner. It dawned on me that my family nor my friends had never heard of Pancakes in their veggie soup and at home in Germany that’s a comfort food all year round. I can’t believe that I have never dished it up, because my family at first turned their noses, ended up loving it and asking for seconds and another day to add the Veggie & Pancake soup to the meal plan.
That being said, I wasn’t planning on posting this on the blog and didn’t really take pictures, but until I realized that everyone thought I was crazy and had never heard of a Pancake soup, that’s when I changed my mind and knew I just had to share it with you. So, my apologies for the lack of pictures. I promise I will update the post soon with better pictures. But it’s fairly simple, so I know you can do it for your family just as well, I bet they will love it, too.
You need this to make your Savory Pancakes
- 4 eggs
- 300 ml milk
- 250 g flour
- handful of fresh parsley, chopped
- dash of salt
- butter for the pan
This is how to make the Savory Pancakes

Take the flour, add the milk, eggs and salt mix it to a liquid dough, you don’t want it thick, it has to be runny.

Add the parsley to the liquid dough mixture and mix for a few seconds

melt butter and add one ladle of the pancake mix to the pan, swirl your pan around to get a very thin pancake, let it brown and remove from pan to a plate; repeat with the remaining pancake mixture till you have a stack of pancakes.

Once the pancakes are all done, let them cool and then cut into strips…. set aside till your soup is done and add as a topping to your soup.
This is what you need for your vegetable soup
- Carrots
- Peeled, cut into cubes potatoes
- Leek, washed and cut into rings
- Celery root, cut into cubes
- handful of chopped parsley, add after the soup is done
- Your favorite vegetable, chicken or Beef Stock
This is how to make your Vegetable Soup
Add all the vegetables and the stock to a stockpot, bring to a boil and boil for about 20 minutes till all the veggies are soft and tender; add your parsley last, right before serving. That’s it, your soup is done; add the pancakes and enjoy!!!
This is a simple, yet filling dinner that everyone enjoyed in my house even after turning their noses up of pancakes in their soup.

This sounds delicious! I can’t wait to try it for my family. My favorite soup is chicken noodle soup with extra thick egg noodles, but this sounds like it may be my new favorite.

My favorite soup is Split Pea and I have never had pancakes in my soup but it does sound interesting and think it would be great with vegetable soup so will give it a try. I can see how it would be a comfort food and like the idea of not having pancakes just for breakfast any more.
