I love this time of the year and even in Florida we are finally feeling a few leaves dropping and a breeze here and there; fall is knocking at the door. I love the fall season with all the beautiful colors, smells, traditions and one thing I love the most about fall, Pumpkins. During our weekly grocery trip to Publix we found beautiful pumpkins and I wanted to include them somehow for our Sunday Brunch. Every Sunday I try to create a special brunch for the family; we don’t get much time to enjoy each other during the week. Most of the time we have Breakfast on the Go, so I try to make Sunday a special day for us and dish up something special each and every week. Sunday’s is my time to spend with the family to reflect back to the week, all the good things that happened, all the things we need to get done in the coming week and anything else that the kids have encountered. I just love Sundays in our home.
While picking up a few of the beautiful pumpkins at Publix I also found a great deal for the Aunt Jemima frozen waffles, I had found a printable coupon earlier in the week for them. I know the kids love the waffles and knew they would work well for a fast breakfast or breakfast on the go, but I also knew it would be fun to somehow combine the frozen waffles with the pumpkins. My Sunday Brunch idea was born.
How can brunch get any better? How about make it super-fast and make it taste like Pumpkin Pie? Impossible? What if I tell you that it is totally doable and your kids will ask for it often?
I told you, it’s simple! The kids loved it and boy was it delicious! The fresh pumpkin mixed with the cream cheese spread on the warm waffles, just mouthwatering… YUMMM… is all I can say! It was super simple and everyone asked for seconds. I used the frozen waffles from Aunt Jemima, they now come 14 waffles to a package and the best part, they have a new packaging; it’s no longer a box! I hate cardboard boxes in the freezer, they always take up a ton of room. Aunt Jemima didn’t just increase their waffle count from 10 to 14, giving you #4MoreWaffles then other companies, they also have a new freshness bag that is resalable, which means the waffles stay fresh longer! I love that idea and concept. The bag fits perfect in my freezer and no longer do I have that bulky cardboard box taking up all the precious space.
We love Breakfast, but it doesn’t have to be a chore, make it fun and add some frozen waffles to save some time in the kitchen. Who said short cuts aren’t allowed? You can always create your very own filling and mix up the recipe and instead of the pumpkin puree, you could add your favorite jelly, fruit or maybe nuts. The possibilities to make this recipe a favorite in your family are endless and your little Aunt Jemima helper will be our secret and it will be safe with me .
I think we will try to add fresh apples or pears another fall flavor next time we make these breakfast waffles. I can’t wait to dish them up again. It was a lot of fun making them, took no time at all and everyone loved them. They tasted just like a Pumpkin Pie, I think even better. You just have to try them!

When I read the ingredients I was unsure of how the cottage cheese in the filling would taste but honestly with all of the other ingredients I”m sure it’s probably not as bad as it sounds— sweet even. Thanks for sharing your unique recipe!

Hi Dee .. Thanks for checking out my recipe ….. you will not even notice that the cottage cheese is there.. soo creamy and delicouses.. once you blend it in the blender no one will ever guess that cottage cheese is in there… YUMMM… you so have to give it a try 🙂
