One of my favorite types of food is Mexican and my mom has an awesome recipe for an Enchilada Bake – she makes it for us just about every time she visits – I will warn you though – she always makes a mess in the kitchen with this one
She prefers her beans mushed (as in put thru the food processor – so if you have issues with beans too – this may be an option for you too!) If you want to add some meat or chicken to it – you definitely can – we have had it both ways and it’s great!
What you need:
- 1/2 cup chopped onions
- 1 clove garlic – minced
- 1 cup mushrooms – diced
- 1 green pepper – chopped
- 2 cups of canned beans – rinsed
- 1.5 cups of stewed tomatoes
- 1 tbls chili powder
- 8 tortillas
- 4 oz shredded mozzarella
- 4 oz shredded cheddar
What you do:
- Preheat Oven to 350 degrees
- Sauté onion, pepper, and garlic
- Add beans (or beans and meat mixture), tomatoes, mushrooms, and chili powder
- Simmer for about 30 minutes
- Spray baking dish with PAM
- Layer mixture in-between tortillas
- Top with cheese
- Bake for 15 – 18 minutes or until warm throughout
*optional – top with sour cream and/salsa

Yum, baked enchiladas. I like the idea of putting the beans in a food processor and making them mushy. Would give the dish a thicker, richer texture, as if it needs it 🙂
