Crockpot Thursday: Chicken Cacciatore

This week, all our Meals are from the wonderful Book called Dinner is Ready – 30 Meals in One Day; we are currently reviewing the book and their software and will provide a full review next Monday. However, so far we are truly happy with the recipes and the software. Our Crockpot Thursday comes from the book as well.


Here is a screen shot of the Software that Dinner is Ready – 30 Meals in One Day has and how simple it was to prepare for my Meal. Doesn’t that look easy?? I already like the “easy” factor of this….

This was a super easy recipe and all we needed was:

How did we like it?
We really enjoyed this dinner; it was simple and quick and we had all the ingredients in our stockpile, making this a very affordable meal. We did decide on a few adjustments for next time, and that’s the nice thing about recipes, you can tweak and add and remove what you like and create something totally different; Next time I cook this I will only add one can of Tomato Paste, it was a bit too much Tomatoes for our taste; I also increased the chicken stock to ½ cup and would probly be okay with one can of Tomatoes with the two can of tomato paste it was a bit dry and more pasty then I like; still good, I would just add more liquid next time. Other than that it was wonderful; It took about 3 ½ hrs for the chicken to cook from frozen to finish; the chicken flavor was great and everyone really liked it. Hubby enjoyed it a lot and asked to make it again real soon. I loved the “cheap” aspect of this and that this is one dish that doesn’t have any kind of cream sauce with it…J I also liked that it’s so easy to adjust, you can add corn to it, or bell peppers to mix it up next time. Really good and Simple recipe.

We served it with Tomato & Mozzarella Salad and French Bread…..Soo yummy.

      It really is yummy, you should check out the rest of our Crockpot meals.. all simple.. as a crazy Mom I can’t deal with “fancy” dinners…:-)
