Crock Pot Thursday: Pork Adobo

This Crock Pot Thursday, my hubby wanted to choose a dish. He decided on Pork Adobo, a Philipine dish. I must say it turned out very good and was soo easy to make. We will defiantly make it again, just with a lot more meat next time. Everyone loved it.

This is such a versatile dish, too, you can just serve it with veggies and rice, or over  Tortillas, or nachos or however you like it.

Here is what you need:

1 1/4 lb. pork shoulder

3 tablespoons apple cider vinegar

3 tablespoons low sodium soy sauce

1/2 cup water

3  garlic gloves, minced

1 jalapeno pepper, minced

1/8 teaspoon crushed red pepper flakes

How to make it

  1. cut pork into 1 – inch cubes, mix with remaining ingredients and refrigerate overnight.
  2. The Next morning, toss everything in the crockpot, turn on high 8-9 hrs or till pork is done and tender.

Serve traditional on Tortila with HOT rice, avocado, chopped tomatoes….

    Interesting way to make it, I’ve never seen Pork Adobo made like that. I have a couple of family members that are Filipino they makes theirs different, usually they add bay leaves, it changes the flavor. I’ve tried the Mexican version of pork adobo, but prefer the Filipino version over rice. hmm good!

    Hey Mo… I’ve never seen it till hubby found it in a cookbook.. so I wouldn’t know the difference..lol.. but it was pretty good… meat was soo tender …mhhh
