I love summer, how about you? The kids are finishing up the last few days of school and then it’s up to me to keep them entertained and fed. During the dog days of summer we love to hang out outside by the pool as much as we can this year.
However dinner always will be on my mind. I’m sure I will use my crockpot often as well as the grill. I hate heating up the house and don’t like spending hours on the stove.
Not sure about you, but it’s much more fun to get a tan instead of being a slave on the stove, wouldn’t you agree?
I’ll add a lot of Salad’s and grilled dinners to our meal plan and over the holiday weekend I tried one recipe that I fell in love with and know will be dished up often this summer.
Lime Shrimp & Avocado Salad. Have you ever tried it? It’s AMAZING! Super easy, just a few ingredients but the flavor is out of this world. Such a great combination and the best part you could mix it up and add chicken instead of shrimp, use it as a taco filling, a dip with chips or just serve it as a salad with French bread on the side.
The possibilities for the Lime Shrimp & Avocado Salad are endless. If you like, add some corn to give it a little Mexican flare; add some pineapple or mango to give it Caribbean flare.
Now isn’t this a perfect summer dish? I can’t wait to give it a try and maybe even add tomatoes, or tomatillos. Just so fresh, keeps you cool on a hot day and is totally filling.
Even my picky eaters loved it. You could make the Lime Shrimp & Avocado Salad the night before and let the shrimp and veggies soak in the lime juice. I personally would wait and add the shredded lettuce right before serving, however my husband said he really liked the lettuce marinated in the lime juice and didn’t think it was soggy or mushy at all.
